Zucchini Borek


Why not substitute you afternoon tea time with more of a salty snack, rather then something sweet. This recipe is perfect for those of you who do not have much of a sweet tooth, It is filling and somewhat healthy compared to all the other ready made salty snacks you find in the super market, and the best part of all is that it is simple to make! This recipe can be made with different ingredients such a spinage, cheese and meat however my favorite is mixing zucchini and feta cheese together.

In order to make this dish you will need:

5 pieces of zucchinis
feta cheese
salt
pepper
ready made pastry
4 spoons olive oil
half a cup of natural yogurt
1 cup of milk
1 egg

Instructions:

Peel the zucchini and in an empty bowl, grind it all, and a pinch of salt and pepper to the zucchini and mix it. 
As the Zucchini absorbs the salt and pepper, in a different bowl break and egg, add the half cup of yogurt, 4 spoons of olive oil, the cup of milk and whisk it for 2-3 minutes.

Next you will take out the oven pan where you will cook your borek in. With a brush, add some olive oil to the surface of the pan to avoid your pastry from sticking to your pan.



Go back to your squash mixture and add some feta cheese. The amount does not matter, I love cheese so I tend to add a lot. Make sure you mix it perfectly.



 On the pan, add the first layer of pastry, and with a brush add a tiny bit of the liquid mixture and brush through and add the next layer of pasty. I recommend at least 3-4 layers of pasty as it will make up the crust. Next add your zucchini mix, spread it all over. I would say not too thick nor too thin. Finish it off by adding the next 3-4 layers of pastry, in the exact same process you did for the crust. 


Finally add your borek to the oven in 120 degrees Celsius and let it cook for an hour. Once your borek is ready I suggest you leave it out for 20 minutes before you serve it.


And voila! your snack is ready.
