Red Velvet cake

Red Velvet cake has always been one of my favourite cakes, even though I find baking them a little challenging. I was amazed to discover the history of where it all began. The other day we were sitting in class when a very generous teacher of ours brought in some red Velvet cake. She explained to us, that back in Word War 2, chocolate was not easily attainable so people turned to red velevet cake by using boiled beets to give it's rich red colour.   However the modern day Red Velvet cake includes red food colouring instead of beets, topped with some cream cheese for extra flavouring. For generations this cake has carried on it's tradition, used a lot in typical American weddings. If you are interested in baking this cake there are a lot of recipes you can find online. I came across a Martha Stewart "Heart red Velvet Cake." Since St Valentine's day is coming up, it could be a perfect occasion to bake this for your loved one.
